These noodles are said to have originated from the pinched variety or mee hoon kueh, whereby the dough is pulled and torn and cooked in boiling water.The broth gets a sweet taste, from a generous sprinkling of deep fried anchovies and shallot crisps. It is topped with preserved vegetables or leafy greens and minced meat.
